The Restaurant Impossible star announced the new venture in Las Vegas Monday, but not before making a dramatic entrance by rappelling 22 stories (220 feet) down the exterior of the Tropicana hotel to the assembled press below.

After safely touching down, Irvive was introduced by Bob Sheldon, the head of Tropicana’s Las Vegas Operations.

“Chef Robert Irvine has tackled some of the toughest culinary challenges around the world, and we’re excited to have him take on Las Vegas, right here at the Tropicana.”

Irvine indicated he had been on a mission to break the barrier into the food and dining scene in Las Vegas the moment he stepped foot into the city.

“I am excited to join the city’s impeccable culinary talent and I could not be happier with my decision to embark on this journey right here at the Tropicana Las Vegas.”

Best known for his appearances on the Food Network as the host of Restaurant: Impossible and Dinner: Impossible, Irvine’s experience in the culinary arts spans more than 25 years. From hotels to cruise lines, Irvine has circled the globe in his pursuit of culinary excellence.

The all-new modern American-inspired restaurant is set to debut on Tropicana’s casino floor sometime in 2017.
