Chipotle Mexican Grill is testing new plant-based Mexican Cauliflower Rice at select locations in Arizona, Southern California, and Wisconsin.

Prepared in-restaurant daily, fresh cauliflower rice is grilled in small batches on the plancha, and seasoned with a signature blend of spices including garlic, cumin, salt and paprika to give it the rich flavor and vibrant hue of Mexican rice.
Mexican Cauliflower Rice is Keto, Vegan, Vegetarian, Paleo, and made with grain-free ingredients. It can be added to any entree or enjoyed as a side for an additional cost.
You can find Mexican Cauliflower Rice for a limited time at 60 select location in Arizona, Wisconsin, and Southern California.
Additionally, and for a limited time only, Chipotle is offering free delivery on orders of $10 or more that include Mexican Cauliflower Rice through June 21, 2022.
Following last year’s Cilantro-Lime Cauliflower Rice, this marks Chipotle’s latest menu innovation in addition to the launch of Plant-Based Chorizo, Pollo Asado, and most-recently, Watermelon Limeade, Chipotle’s first-ever seasonal beverage.
