Food sales at The Tradewinds is up by 25 percent and the calzones – which were added to the menu by Jon’s crew during the original makeover – remain a very popular menu item that have improved the bar’s bottom-line. On Chase, he’s broken all his bad habits and has become a very responsible bar manager.
