Baja Fresh Mexican Grill is spicing up its menu with the introduction of Vampiro Tacos, featuring a cheesy twist on traditional street tacos. Alongside the new addition, the chain is also welcoming back Birria Tacos to its lineup.

The newly launched Vampiro Tacos boast a combination of flavors and textures. Crafted with two soft corn tortillas cradling fire-grilled steak, pinto beans, pickled red onions, pico de gallo, hot salsa, and guacamole, these tacos are then grilled in crispy mozzarella cheese. Fans can savor these culinary delights with a side of Baja rice, choice of black or pinto beans, and a zesty lime wedge.
The Vampiro Tacos will be served at participating Baja Fresh locations nationwide until July 22, 2024.
In addition to the Vampiro Tacos, Baja Fresh is bringing back the fan-favorite Birria Taco Combo. This dish features two grilled tacos made with mild chile-soaked corn tortillas, generously stuffed with marinated and fire-grilled steak, cheese, salsa, and a mix of chiles, onions, and cilantro. Accompanied by a side of rich and savory chile beef consommé for dipping, as well as Baja rice and a choice of black or pinto beans.
